Recipe- Brownies

I sometimes forget how much I enjoy a good brownie. Then I have one, and I wonder why I don’t make them all the time. I adapted this recipe from the Happy Herbivore Light and Lean cookbook. It’s super simple, quick, and really delicious. The best part? It’s very low calorie and lowfat! Silken tofu is used in the base here and don’t worry, you won’t be turned off by taste or texture. Everyone I have ever made these for has no idea there’s tofu in them!

Ingredients:

1 12 oz package silken tofu, pressed

*If you are using the refrigerated type, be sure to use just over 2/3 of the tofu, as it usually comes in a 16 oz package.*

1/4 cup agave

1/2 teaspoon vanilla

4 tablespoons nondairy milk, divided

3/4 cup flour

2 tablespoons brown sugar

6 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

1/2- 3/4 cup vegan chocolate chips

The giant bag of chocolate chips seen here can be purchased at Costco for about $5. They just happen to be vegan friendly! šŸ™‚

Directions:

Preheat oven to 350° F

Blend the tofu, agave, vanilla, and 2 tablespoons of the nondiary milk together in a food processor until smooth.

In a separate mixing bowl, mix flour, brown sugar, cocoa powder, and baking soda.

Add two tablespoons of nondairy milk and mix until all incorporated; there should be no “dust” from the ingredients left. If necessary, add more milk little by little to help blend dry ingredients. Then add your tofu mixture to the flour mixture.

Finally, stir in desired amount of chocolate chips.

Lightly grease an 8 inch pan with cooking spray and spread brownie batter evenly, throughout. This batter is very thick, and it might seem like there is not enough to spread, but try to get it as even as possible; It will rise considerably as it bakes.

Oh, another great part about the fact that this recipe is vegan? You can taste the batter! (And it’s delicious!)

As I was tasting, my daughter had to try some too, of course! Another toddler approved recipe!

Bake at 350° F for 16-20 minutes. Usually about 17 minutes does it for me. Brownies will firm up on top and also, a toothpick inserted in the center should come out clean.

Allow to cool before serving. I dusted mine with a little powdered sugar. I also enjoy these as a sundae base with some vegan ice cream, or with a dollop of vegan whipped topping. šŸ‘Œ
