Recipe- Chickpea Cookie Dough (Raw and GF)

Chickpeas have done it again! As if there wasn’t enough to love about these lovely legumes, here is one more reason. Everyone loves to snack on raw cookie dough, but we’ve all heard the caveats. Most cookie dough contains raw egg which when consumed can cause salmonella. While this hasn’t stopped most people from spooning it into their mouths by the heaps, I was never allowed this delicacy. My mom forbid me to eat raw cookie dough growing up, and now I understand why. With so many alternatives that don’t contain egg these days, why take the chance anymore? Just makes a yummy brand of cookie dough that can be eaten raw or baked. The only problem is, it’s hard to find in stores. I set out to find a healthier version of the coveted dessert snack, and was pleased to find a version that contained chickpeas. There are few ingredients in here and you’d never guess the main one. Make a batch and have it on hand to satisfy your sweet tooth all week.

Ingredients:

1 can chickpeas, rinsed and drained

4 tablespoons maple syrup

1/2 cup almond butter

1 teaspoon chia seeds

Pinch of salt

1/2 tablespoon almond milk

1/2-3/4 cups vegan chocolate chips

Directions:

Add chickpeas, syrup, almond butter, chia seeds, salt, and milk in a food processor.

Blend until the consistency is smooth. This might take a few times of stopping and scraping the sides, but you really want it to be as smooth as possible. Pour into bowl and add chocolate chips.

Stir in chocolate chips by hand.

Refrigerate for 3 hours before enjoying. It will thicken after being in the refrigerator.
