I promised to deliver a super easy tempeh recipe this week, and here it is! Tempeh, lettuce, and tomato sandwiches are super easy to make and assemble. Growing up, my mom used to make the classic BLTs for us. I’m a little embarrassed to say that I hated tomatoes and lettuce, and would eat a bacon sandwich with mayonnaise. 😵I’m so glad my eating habits have changed since I was 8 years old!!! (Though tomatoes still aren’t my favorite, I really try to tolerate them.) This sandwich gives you all the protein and flavor with none of the cholesterol, grease, and guilt of a standard BLT. I like to add sprouts and avocado to mine, but you can add or eliminate anything you want to the final product!
This will make 2-3 sandwiches, depending on the bread that you use.
1 8oz package tempeh
Store bought or homeade marinade
Handful lettuce, of your choice (spinach is also good here!)
1 ripe avocado (optional)
Alfalfa sprouts (optional)
Vegan mayo (optional)
Bread or bagels
Preheat oven to 350°F
Cut tempeh into half inch strips. I was able to get about 14 pieces from my 8 oz block. You can marinate these as are, or you can cut in half again lengthwise, for a thinner tempeh strip.
Let me tell you about about my favorite marinade from, you guessed it, Trader Joe’s! I bought this a few years ago to try, and now I can’t leave the place without grabbing a bottle. They have an original and an island version; the island is my favorite!!! I do still make my own marinades sometimes, but it is nice to have this when you are short on time.
Pour marinade into a shallow pie plate or other baking dish so that it just covers the bottom. Place tempeh in dish, leave for 10 minutes, then flip and leave for another 10 minutes.
Line a baking sheet with foil or parchment paper and place tempeh pieces so they do not touch. Spoon additional marinade on top. Bake for 10 minutes, flip tempeh, spoon a little more marinade on, and bake for another 10 minutes.
Use your choice of bread. I used an everything bagel from Trader Joe’s, 😍 but any toasted bread would be lovely! Add your desired toppings and you have a beautiful, healthy meal!
