Recipe- Slow Cooker Pumpkin Chili

If you thought one pumpkin recipe was enough, you were sorely mistaken! The temperature isn’t warming up any time soon, so embrace the sweater weather and make this slow cooker pumpkin chili.

If you are missing the meat, Trader Joe’s crumbles are a great addition here, just stir them in when the chili is nearly done, since they do not need to cook for very long at all. Though not necessary because this chili is flavorful and delicious, as is!

I have made pumpkin chili from Thug Kitchen cookbook and it is amazing, of course, but I really enjoyed having the slow cooker option with this recipe. When one of my best friends raved about pumpkin chili in her slow cooker, I had to try it out!

Before she stopped eating meat, she loved the recipe as is, but since then, she adapted it to be vegan friendly.

I tweaked it a little further to what I felt was most desirable, so behold!

I’m so glad I finally decided to give it a try. It’s a great addition to my slew of fall recipes and a great option to set and forget until dinner time.

Serves: 6

Ingredients:

1 tablespoon olive oil

1 large yellow onion

1 medium green bell pepper

6 cloves minced garlic

1 14.5 oz can diced tomatoes

1/2 of a 6 oz can tomato paste

1 15 oz can pumpkin puree

1 15.5 oz can kidney beans or beans of your choice

1 cup vegetable broth

2 teaspoons oregano

2 tablespoons chili powder

1/4 teaspoon ground cinnamon

1 and 1/2 teaspoons cumin

1 teaspoon salt

1/2 teaspoon black pepper

Pinch of cayenne pepper (optional)

1 package Trader Joe’s beefless crumbles (optional)

Optional toppings: chopped jalapeno, vegan sour cream, avocado, tortilla strips.

Directions:

Heat oil in a large pot over medium heat. Add diced pepper and onion. Saute for about seven minutes.

Add the garlic and stir well.

Place onion pepper mixture in slow cooker and add remaining ingredients.

Mix well.

Slow cook low for 6-6.5 hours.

If using, stir in a package of Trader Joe’s beefless crumbles. Let sit for at least 15 minutes so the crumbles can absorb the flavor.

Spoon into bowl, top with desired toppings, wrap up in your favorite blanket, and enjoy!
