Recipe- Lentil Sloppy Joes

Warning- these do indeed get messy!This homemade sauce is so much better than using a canned one. There’s a lot of ingredients in here, but they come together beautifully to make a slightly sweet, flavorful sauce. You won’t ever need to buy those premade, bland sauces ever again! I know I won’t be!

I love that lentils are the star here. They are packed with protein and fiber. This is great news for several reasons. Lentils are full of complex carbohydrates, which our bodies burn more slowly. This, combined with the loads of fiber, means they’ll have you feeling full longer, on much less calories! Isn’t that what we all dream of?

Lentils are inexpensive for the amount that you actually get in one bag. Two cups of lentils in this recipe yields about ten sandwiches! It was perfect to serve to my friends this week when we all got together. It is definitely a recipe to keep in mind if you are cooking for a group of people. Just have some hamburger buns on hand and you’re ready to go. Most of the ingredients in here are things the average person has in their pantry or fridge. (Obviously, just stock up on lentils.) Keep them in the pantry for that day you unexpectedly need to put together a meal for your friends!

Ingredients:

2 Cups cooked green lentils

1 large green bell pepper, diced

1 medium onion, diced

1 Tablespoon olive oil

2 Tablespoons tomato paste

2 teaspoons garlic powder

2-3 teaspoons chili powder

1 teaspoon vegan Worcestershire sauce (optional)

Salt and pepper to taste

2 Cups ketchup

2 Tablespoons maple syrup

2 Tablespoons pickle relish

1 Cup water

Directions:

Cook lentils according to package directions.

Dice pepper and onion and saute in the olive oil for about 10 minutes in a large pan.

Add tomato paste, garlic powder, chili powder, Worcestershire sauce, salt, and pepper, and stir.

Add the relish, maple syrup, ketchup, and water and combine.

Finally, add the cooked lentils. Cover pan and let simmer for 25 minutes, stirring a few times.

Serve on hamburger buns and enjoy.😊
