There’s nothing like fresh berries, especially on a summer day. This fruit salad is so yummy, you won’t be able to wait until summer. And you shouldn’t! I stole this recipe from one of my friends (thanks, Laura!) who made it vegan just for me at a family gathering. I ate a whole plate of it a week ago and couldn’t stop thinking about it. It’s so easy that you’ll wonder how is it possibly that good. I asked for the recipe and I just had to share. You can use either lemon or lime here. I personally love the taste o
f limes, but lemon is a popular choice too! You can’t go wrong with either. Don’t be intimidated by the mint. I’ve made watermelon salads with mint before and I know it’s easy to overdo! Be conservative with it and add more if necessary. I just may have found a new dish to bring to Fourth of July cookouts! Get a jump on summer and give this a try!
Serves: 8
Ingredients:
2 cups fresh strawberries, halved or quartered
1 cup fresh blueberries
1 cup fresh blackberries
1 cup fresh raspberries
2-3 tablespoons agave
Juice of half a lemon or lime
Optional teaspoon of lemon or lime zest
1 tablespoon fresh mint
Directions:
Combine all berries in a large bowl.

Mix other ingredients in a small bowl. Taste, adding more agave, lime juice, or mint, if needed. I liked to mix it first to adjust the flavors for personal preference, but you can pour directly over your berries, too.

Add lemon or lime juice and zest, agave, and mint mixture.

Stir gently, being careful not to smoosh the fruit.

You can allow to chill in the fridge for a few hours to let the flavors mingle, or enjoy right away.
