Recipe- Vegan Cucumber Sandwiches

Cucumber sandwiches. It’s long been a staple at baby showers, wedding showers, and cookouts. They are so light and refreshing, and the contrast in texture between the crisp cucumber and the soft bread makes every bite perfect! So what to do when I became vegan and I was unable to eat traditional cucumber sandwiches? I became the person who brought vegan ones to the party! There’s no shortage of great tasting vegan cream cheese out there. If you can’t find one with chives already in it, dice up some chives and add to a plain cream cheese. You can leave the crust on the bread, or cut them off depending on your preference. My kids prefer no crust!

Oatly chive and onion cream cheese worked great here.

Ingredients:

One cucumber, sliced thinly

One 8 oz package vegan cream cheese (plain or chive)

1/4 cup vegan mayo

1/2 tsp garlic powder

1/4 tsp salt

1/2 tsp dill

1 Tbs lemon juice

Black pepper

About 10 slices of bread of choice

Directions:

Cut cucumber thinly and pat dry with paper towel.

In a small mixing bowl, combine cream cheese, mayo, garlic powder, salt, dill, and lemon juice.

Cut the crust off your bread if doing so.

Spread about a tablespoon of the mixture onto each slice, and place 4 cucumber slices onto one of them.

Sprinkle some dill and black pepper onto the cucumber half.

Place the bread together to make the sandwich. Push down firmly and cut the sandwich in half.
