Easy Vegan Rice Crispie Treats

So you became vegan and thought you had to give up rice crispie treats? Think again! While conventional marshmallows have gelatin in them making them not vegan friendly, Dandies is here to save the day. Their brand is fully vegan! With just 3 ingredients, you can make these delicious treats in minutes. Growing up, my mom made these in the microwave in a matter of minutes. I thought, it must be pretty easy to substitute vegan ingredients, and sure enough it was! Rice crispie treats like my mom used to make. Feel free to use less marshmallows or add more rice cereal to your liking!

*note that some brands of cereal are fortified with vitamin D which comes from an animal source. Be sure to look out for that when choosing your cereal.*

Ingredients:

4 tablespoons vegan butter

1 package Dandies brand mini marshmallows

5 cups vegan rice cereal

I really like this rice cereal as an alternative to the conventional brands. As an added bonus, it’s also gluten free, if that fits your needs!

Directions:

Spray an 8×8 inch pan with cooking spray.

Melt butter on stovetop or in the microwave.

Pour entire bag of marshmallows into the bowl, making sure to coat the marshmallows thoroughly in butter.

Microwave for 2 minutes on high. If using stovetop, heat for a few minutes until marshmallows are puffy.

Quickly stir in rice cereal.

Pack down into pan.

Allow to cool a few minutes before slicing.
